Observation is when you directly gather information. Inference is when you assume something based on prior knowledge. The difference is that when you observe something, you are recording the characteristics of something, while an inference is an assumption.

Palm reading is pseudoscience. Chemistry is science. Palm reading cannot be tested by experiment. Chemistry can.
