Lesson 3- Storing Food
FIFO
(First In First Out) Stock rotation method
*** Rules for refrigerated foods (5)
- Cooked food above raw food ( o contamination ) - Cooked food items covered (unless they are in cooling process) covered at 41 * - AVOID placing hot foods in refrigerator (cause T* to rise, which affects other foods) - AWAY from dripping condensate - 6in away from floor
***Rules for dry storage
- FIFO method rotation - Food kept At least 6in above the floor - Food in tightly fitted lids -Do NOT store foods under overhead water that may drip due to leaks or condensation -Keep dry storage ventilated and well lighted -But avoid exposure from sunlight (install shades in window) -NO garbage in dry storage area -Dry storage = vermin proof by sealing walls and baseboards
*** Rules for freezer storage (5)
- FIFO rotation - Frozen food should be frozen solid T* below 0*F - Always use clean, clear containers (labeled and marked, proper and secured lids) - Adequate spacing between food containers (proper circulation) - NEVER use freezer for cooling hot food
Receiving multiple items (storage methods)
-Frozen foods first -Refrigerated food -Non-perishable dry goods
Common type of storage (4)
-Refrigeration storage -Freezer storage -Dry storage -Storage in Ice
Smoked fish T* Fresh food T* Frozen food T*
38*F Below 41*F Below 0*F
Foods should only be stored in designated areas
AWAY from passageways, rest rooms, garbage areas, utility rooms, etc
Freezing method
Best way for prolonging shelf life (keep food frozen and solid, minimal growth of bacteria)
Food containers --MUST BE--
Clean, non-absorbent, and made from food grade material
First step of FIFO
Date all products as they are received. Then store newer behind the older one
Cold temperature -KILLS- microorganisms. True / False
False (slow down their growth)
Harmful bacteria can reproduce to dangerous level
Food tased- refrozen - tased NEVER refreeze tased food
Dry storage
Low humidity (50 %) Low temperature (Below T*70) Avoid sunlight
It is always BEST to store food in original packaging True / False
TRUE
Pesticide use is PROHIBITED unless used by a licensed pest control officer
TRUE
Containers made from metal reacts to high acidic food such as
sauerkraut, citrus juice, and tomato sauce (instead use plastic containers)
Refrigerated area
Used for holding potentially hazardous food as well as perishable foods (FOR SHORT periods of time)
Food stored at temperature recommended by manufactured
Vacuum packed foods, modified atmosphere packages and sous vide foods
Thermometers must be placed in the _____________ part of a refrigerated unit to monitor the temperature of each unit.
WARMEST
Containers made of ________________________ ARE PROHIBITED.
copper, brass, tin and galvanized metal
Cheese can be frozen but
freezing will affect taste and texture
