- more expensive to make - are a chocolate of class - said to be the "jewel of the candy case" - priced by the each rather than by the pound - chocolate center that has been whipped with heavy cream making it a creamy, richer center (like a gouache). Next, flavor is added. - the center is injected into a thin chocolate shell , the entire thing is enrobed and the signature is made on top of the piece - takes two days to complete - none of the flavors contain true alcohol - essentially, a truffle is 3 layers of chocolate with flavor infusions - individually priced at $3.50 each (same with SUGAR FREE)
