FOODA Cafés

Café style FOODA events take place at a participating corporation where there is a designated café for employees to purchase lunch every day. The most prominent FOODA café for Tripoli's is Credit Human HQ.

Transporters

Insulated containers used for transporting food items and retaining their ideal temperature. Examples of transporters include Cambro Go-Boxes, Keep it Kool transport bags, and Big Bro transporters.

Servingware

Serving utensils required to operate an event. For events being served by the Tripoli's Catering Team metal servingware is to be used, but for Drop Off an Pick Up catering orders plastic servingware is to be used.

POA Form

Stands for Plan of Action. A form used for special events Tripoli's is participating in to keep track of all information and progress regarding the event.

POS

Stands for Point of Sale. POS devices are what are being used for transactions to be made. Square POS is what Tripoli's utilizes.

The Marhaba

The basic form of the Tripoli's Catering Packages consisting of Rice, Pita, Veggies, Dip, Salad, and 1 Protein option.

The Sultan

The largest package from the Tripoli's Catering Packages consisting of Rice, Veggies, 2 dips, Salad, 2 Protein options, an Appetizer, and a Dessert.

Point of Contact

This is the person on record for contact regarding an event. For all events and orders there must be a point of contact.

Catering Partner

This is the term used to refer to repeat and loyal customers of Tripoli's Catering.

Pre-Order

When operating at FOODA pop ups customers can schedule their order ahead of when they would like to receive it, these are referred to as pre-orders.

A term used to explain to other staff members that an item is sold out.

EZ Cater

A third party company that works with Tripoli's to orchestrate Drop Off caterings.

FOODA

A third party company that works with Tripoli's to provide food options to workplaces throughout the city. Most operate as Pop Up style catering.

RE-232

A to go container consisting of two separate compartments used for catering events. Most commonly used during Libyana pop ups.

Full Service Catering

Full-service catering is an all encompassing term used to describe events that are paid for in advance in which the catering team both provides food for an event and serves the guests throughout the event.

Flatbed

A collapsible transport aid with handles that allows for items placed on top to be moved as needed.

Cambro

A company specializing in food transport. The brand name is often used in the restaurant to refer to the Cambro brand Go-Boxes used for transport.

Drop Off

A form of catering in which a customer's order is brought to their designated location. These orders require a headcount of 10 or more.

Pick Up Catering

A form of catering in which guests order catering but choose to pick up their order at Tripoli's rather than have the food taken to them.

On Premise Catering

A form of catering that takes place at the site of the clients choosing. and food is assembled for each individual customer.

Pop Up

A form of catering where food is prepared per person on site with the customer individually buying their meal.

Big Bro

A large electrical Cambro brand transporter. The transporters come with electrical plug in cords, Cambro dollies, and have stacking capabilities.

Packing List

A list composed of all items needed for an off site event to ensure all necessary items are present.

Prep Sheet

A list of all food items and their quantities needed for an event. This also logs the status of all food items needed for prep.

Temperature Log

A log keeping track of the time and temperature of TCS foods while participating in an off-site event. Food temperatures must be monitored throughout the event to ensure quality and safety.

dredge

A metal canister used for sprinkling powder on food items. Used in catering for Sumac garnish.

Food divider

A metal rod used in Food Warmers to divide and support pans smaller than full size.

The Libyana

A package from the Tripoli's Catering Packages consisting of Embakbaka, Baguettes, Arabic Salad, and their choice of Bourek.

The Habibi

A package from the Tripoli's Catering Packages consisting of Rice, Pita, Veggies, Dip, Salad, 1 Protein, and an Appetizer.

Rice Warmer

A piece of electrical equipment that can hold 100 cups and maintain quality and temperature.

Food Warmer

A piece of electrical equipment that maintains food temperature.

Cash Box

A piece of equipment used to store cash needed for pop up events and other events requiring cash transactions.

Lock Box

A piece of storage and transport equipment that requires a passcode to unlock. All sensitive items such as the cashbox, card readers, ect. are located in the lock box during events.
