Sweet peppers

Definition: A category of vegetables in the tuber family. They are referred to as waxy because they hold their shape even after they are cooked until tender. Good choice for boiling, steaming, sauteing, oven roasting, and braising. Examples include: red-skinned potatoes, yellow potatoes, fingerlings, and all-purpose. Example: yellow potatoes, red skin potatoes, and all purpose

Definition: A family of vegetables that consist of artichokes, asparagus, celery, fennel, and fiddleheads. Example: celery

Definition: A family of vegetables that grow underground. They serve as nutrient and moisture reservoirs for the tops of the plant. Rich in sugars, starches, vitamins, and minerals. Vegetable examples include: beets, carrots, parsnips, radishes, and turnips. Example: You could use carrots in carrot cake

Definition: A family of vegetables that include spinach, swiss chard, turnip greens, collards, and kale. These vegetables are usually sauteed, steamed, or braised. Example: salads

Definition: A family of vegetables where their fleshy portion of certain plants that usually grow underground. Three categories of tubers. Example: sweet potato
