Sweet peppers

A category of vegetables in the Pepper family. Sometimes called bell peppers because of their shape.

Capsaicin

Definition: The compound that gives a chile it's heat. It's most potent on the white ribs inside the pepper. Example: Found in spicy peppers

Winter squash

A category of vegetables in the gourd family. Their rinds are inedible and their large seeds are removed before serving. Vegetables include: acorn, butternut, and delicata squash.

Dry Onions

Definition: A category in the Onion family. Range in size and color. They have a juicy flesh covered with layers of papery skin. Vegetables include: garlic, shallots, yellow onions, white onions, and sweet onions. Example: yellow onions

Chiles

Definition: A category of vegetables in the Pepper family. Grow in various sizes, colors, and levels of spice or heat. Popular vegetables: jalapeno, habanero, poblano, cayenne, and anaheim. Example: You would use this in pizza

Edible pods

Definition: A category of vegetables in the Pods and Seeds family. Picked when the pod is still fleshy and tender enough to eat. Vegetables include: snap peas, snow peas, green beans, and wax beans. Example: green beans

Yams and Sweet Potatoes

Definition: A category of vegetables in the Tuber family. Use the same cooking techniques suggest for low-starch/high-moisture potatoes for the sweet potatoes. As for yams, use the same cooking techniques for high-starch/low-moisture potatoes. Example: sweet potatoes used in sweet potato pie to give it that nice sweet taste

These vegetables are picked when immature to take advantage of their tender flesh, seeds, and skins. Vegetables include: zucchini, yellow squash, and pattypan squash. Example: Yellow squash

Low-starch/high-moisture potatoes

Definition: A category of vegetables in the tuber family. They are referred to as waxy because they hold their shape even after they are cooked until tender. Good choice for boiling, steaming, sauteing, oven roasting, and braising. Examples include: red-skinned potatoes, yellow potatoes, fingerlings, and all-purpose. Example: yellow potatoes, red skin potatoes, and all purpose

Definition: A family of vegetables that consist of artichokes, asparagus, celery, fennel, and fiddleheads. Example: celery

Definition: A family of vegetables that grow underground. They serve as nutrient and moisture reservoirs for the tops of the plant. Rich in sugars, starches, vitamins, and minerals. Vegetable examples include: beets, carrots, parsnips, radishes, and turnips. Example: You could use carrots in carrot cake

Leafy Greens

Definition: A family of vegetables that include spinach, swiss chard, turnip greens, collards, and kale. These vegetables are usually sauteed, steamed, or braised. Example: salads

Definition: A family of vegetables where their fleshy portion of certain plants that usually grow underground. Three categories of tubers. Example: sweet potato

Definition: A family of vegetables with two categories: sweet and chiles. Example: bell pepper, yams , and chile pepper
