Deplete stored product on a regular basis
If product is not sold or consumed by a predetermined date: Throw it out Clean and sanitize the container Refill the container with new product
Commercially Processed Foods
If the food has a use by date, use that date If combining foods, discard date based on earliest prepared food, i.e. jambalaya with shrimp was a date of 12/8 and sausage with a date of 12/10, must use by 12/8
Rotate products to ensure the oldest inventory is used first
One way to rotate products is to follow FIFO - first in, first out: Identify the use-by or expiration date of products Shelve products with the earliest dates in front of those with later dates Use products stored in front first Throw out food past its expiration date
Label Food
TCS, ready-to-eat food prepared on-site must contain a label that includes: The common name of the food Date the food was stored The date by which it should be sold, consumed or discarded - no more than 7 days Name or Initials
Discard food that has passed the manufacturer's expiration date
TCS, ready-to-eat food that was prepared in-house: Can be stored for 7 days at 41°F (5°C) or lower Must be thrown out after 7 days
