Chef's Knife
Also called a French knife its large triangular shape is ideal for chopping, slicing and dicing.
Dry Measuring Cups
Come in a set of several sizes, usually 1/4 cup, 1//3 cup, 1/2 cup, and 1 cup. A metric set includes 50-mL, 125-mL, and 250-mL measures.
Double Boiler
Consists of a small saucepan that fits into a larger one, plus a lid. Simmering water in the bottom pan gently heats food in the pan above. Used for foods that scorch easily (chocolate, sauces, cereals)
Steamer
Covered saucepan with an insert that holds food over a small amount of boiling water. Holes in the insert allow steam to pass through and cook the food. Metal and bamboo steamers are available, as are steamer inserts that fit in a covered saucepan
Loaf pan
Deep, narrow, rectangular pan for baking loaves of bread or meat.
Tube pan
Deep, one-or two-piece cake pan with a center tube.
Bread Knife
Has a serrated or saw-tooth blade for slicing breads
Dutch oven
Heavy pot with a close-fitting lid. Dutch ovens are suitable for range or oven. Some have a rack to keep meat and poultry from sticking to the bottom.
Pressure cooker
Heavy pot with a locked-on lid and steam gauge. Steam builds inside the pot, creating very high temperatures that cook food quickly.
Slicing knife
Large knife used for such foods as meat and poultry.
roasting pan
Large, heavy, oval or rectangular pans, used for roasting meats
Pots
Larger and heavier than saucepans. Pots range in size from 3 to 20 quarts and have two small handles, on each side, for easier lifting. Most come with lids.
Cutting Board
Protects counter top when cutting. Plastic resists bacteria better than soft woods.
Kitchen Shears
Scissors used for snipping, trimming, or cutting dried fruit, fresh herbs, or pastry
Pie Pans
Shallow, round pans with slanted sides. Tart pans are similar in shape but smaller
Baking sheet
Similar to a cookie sheet,but four sides about 1 inch deep.
Dishtowels
Used to dry things such as dishes and wipe things off.
Kitchen Scales
Used to measure food by weight rather than volume. They can be spring or digital.
Cake pans
Usually round or square, from 8 to 10 inches in diameter. Novelty shapes range from horseshoe to cartoon characters.
Paring knife
removes a thin layer or peel from fruits and vegetables.
