Pomes

Firm, thin-skinned fruits that grow on trees. They have a central core filled with tiny seeds. They can be picked ripe or ripen after harvest, normally they have smooth skin and no blemishes, bruises or soft spots.

Tropical fruits

Fruits that grow in the hot, tropical regions of the world. They ripen after they are picked, normally they are firm, plump and unblemished with good color.

Citrus fruits

Fruits that have a thick, firm rind covered by a thin layer of colored skin called the zest. The soft, white layer between the zest and the flesh of the fruit is called the pith, which is slightly bitter. The flesh of the fruit is segmented and acidic, they grow on trees or shrubs and are harvested when ripe. Normally they are not blemished, or soft and puffy, and they don't continue to ripen after being picked.

Drupes

Fruits that have soft flesh, thin skin, and one pit or stone. They can be picked ripe or they can ripen after harvest, normally they are firm, plump and without bruises or blemishes, they grow on shrubs or trees.

Melons

Fruits with a netted skin or a smooth rind that range in color from creamy to jade green. Normally they are firm, heavy for their size and have a good aroma. Some are picked when they are ripe and others ripen after harvest. Because they are 90% water, they are usually served raw or puréed into soups or sorbets.

Grapes

Grow in clusters on vines, their flavor and color are found mostly in their skin. They are almost always eaten raw. They can be picked ripe or ripen after harvest, normally they are plump and juicy with rich color.

Berries

Juicy, thin-skinned fruits with tiny seeds, they grow on bushes and vines and are picked when fully ripened. They don't continue to ripen after harvest and are normally sweet, plump and even in color.

Exotic fruits

These fruits can be picked ripe or ripened after harvest. Normally they are semi-soft and slightly heavy with good color.
