Blackened / blk.

"Blackening" will make an item peppery hot. We use Chef Paul Prudhomme's blackening spice. Blk. Written in front of the regular abbreviation will signify an item is to be blackened

Batter-Fried Mushrooms

1 quart of fresh mushrooms, lightly battered and deep-fried. Served with mustard-horseradish sauce for dipping

An aged USDA 10 oz. choice center-cut sirloin, seasoned and grilled to perfection. Sirloin is a very popular cut of meat and very economical. Served with choice of one side item and a house salad.

Prime rib

Large rib roasts, slow roasted and carbed into thick slices. Very tender and juicy. Prime Rib is sliced off an already cooked piece of meat. Therefore, the color of the meat (depending on the desired meat temperature) will be visible throughout.

Chicken Salad Croissants & Soup

Two of our famous croissants (without honey butter) served with Rafferty's down home chicken salad and guest's choice of one of the "soups of the day." The homemade chicken salad consists of chopped chicken, mayonnaise, chopped celery, grapes, chopped onions, and chopped eggs. The chicken salad is placed on bed of leaf lettuce and slicked tomato, then topped with candied pecans.
