We roast pork bones in the oven, then shock them in ice water to release the marrow and collagen. They are lightly simmered with vegetable scraps, garlic, fresh herbs and spices for four days.

describe the cooking process for our Duck entree?

We start by separating the skin from the duck breast. The breast is cooked using confit method and the skin is baked in the oven until crispy.

what is gnocci?

an italian style potato dumpling. ours are made with vardaman sweet potatoes.

how is our sweet potato gnocchi served?

in lamb bolognese with seared mushrooms, fennel, roasted tomato, cream, Brebis cheese and freshly ground nutmeg

they are garnished with fresh strawberries and blueberries with whipped cream. only the french waffle comes with grits

Brebis is the french term for fresh sheeps milk cheese. We use Blackberry Farms brebis out of southern TN.
