The tongue is blue/black/purple in colour because it has very few blood vessels. This means that the surface tissue of the tongue will have a darker pigment associated with it (the blue/black tone). The lack of blood vessels makes the giraffe's tongue tougher then most other animals. This helps them to feed on trees and resist impact from sharp thorns such as the ones found on the Acacia trees that they feed on.

Why is the giraffe's tongue blue?

Blue wavelengths are absorbed the least by the deep ocean water and are scattered and reflected back to the observer's eye. Particles in the water may help to reflect blue light. The ocean reflects the blue sky. Most of the time the ocean appears to be blue because this is the colour our eyes see.
