In the world of pizza, Grimaldi's Pizza is an institution. History of coal-fired brick oven pizza cooking can be traced to the first pizzeria in America back in 1905. We serve authentic New York style thin crust pizza in an upscale, family-oriented pizzeria. Coal-fired brick oven cooking gives the pizza a unique smoky flavor and a crisp crust that is just not possible w/ gas convection, or wood ovens.
What is different about the water we use?
It has been said that the secret to true New York-style pizza is the water. Grimaldi's goes to great lengths to keep the integrity of the water used in Brooklyn pizzeria. We hired a chemist to analyze and recreate the mineral content and exact composition of the water. A custom water system pumping "New York water" is installed in every Grimaldi's Pizzeria to ensure that the dough tastes as authentically New York as possible.

Stoking means: To stir up or tend to a fire. To help maintain the integrity of our pizza, we relight the fire at approximately 4pm every day.

The oven can heat up to 1200 degrees, and we cook our pizzas between 500-600 degrees.
Explain the coal we use in our ovens?
We purchase special coal from Pennsylvania called Anthracite. It actually burns cleaner and more Eco-friendly than gas or wood-fired methods. Every month we ship the coal in by railroad and distribute to our locations. The intense heat of the oven and coal evenly bakes the pies to create Grimaldi's famous crispy and smoky crust.
