A bread dough that is leavened with yeast is allowed to rise, is kneaded, and allowed to rise a second time. Why is the second rising time important?

The kneading process redistributed the sugar, carbon dioxide, and yeast cells, but it also knocked out most of the air bubbles, without the second rise, the resulting bread will be very flat.

Why do you knead bread dough

The kneading process warms and stretches these gluten strands, eventually creating a springy and elastic dough.

What is the yeast's function in the bread

Yeast is used for the leavening of bread. Yeast uses the sugars and oxygen in doughto produce more yeast cells and carbon dioxide gas. This is called multiplication. The carbon dioxide makes the dough rise which gives the bread a light and spongy texture.
