double boiler
a small saucepan with a lid that fits into a larger saucepan. simmer water in lower pan to gently heat food in upper pan. useful for foods that scorch easily and for keeping food warm for long period of time.
chef's knife
a.k.a. French Knife, has large, triangular blade for slicing, chopping, and dicing
skillet
a.k.a. frying pan, a shallow pan for browning and frying foods (griddle is this without sides)
muffin pan
a.k.a. muffin tin, holds 6 to 12 muffins, rolls, cupcakes
turner
a.k.a. spatula lets you lift and turn flat foods
heating unit
an energy source in the kitchen
wire whisk
an instrument made of wire loops held together by handle. used for stirring, beating, and whipping
convection oven
an oven with a fan that circulated heated air to equalize temperature throughout
electric mixer
blends, beats, and whips ingredients
toaster
browns slices of bread and small flat pastries on both sides at the same time
sifter
canister with blade or ring inside that forces dry ingredients like flour through wire screen at bottom to make finer particles
blender
chops, blends, and liquefies foods
dry measuring cups
come in set of several sizes, usually 1/4 cup, 1/3 cup, 1/2 cup, and 1 cup. metric set incudes 50 mL, 125 mL, and 250 mL
rice cooker/steamer
cooks rice perfectly and can be used to steam vegetables
steamer
covered saucepan with an insert that holds food over small amount of boiling water. holes in insert (made of metal or bamboo) allows steam to pass and cook food
saucepan
deep pan with one long handle (large ones may have small handle on opposite side too) many come with lid and used for simmering or boiling
slow cooker
deep pot with a heating element in base that cooks food slowly for hours. convenient for one-dish meals
loaf pan
deep, narrow, rectangular pan used for baking loaves of bread or meat
tube pan
deep, one or two- piece cake pan with center tube. used for angel food cakes and sponge cakes
bakeware
equipment for cooking food in an oven
cookware
equipment for cooking food on top of the range
cookie sheet
flat, rectangular pan with 2 or 3 open sides used to bake cookies and biscuits
electric skillet
fries, roasts, steams, and bakes. has thermostatic temperature control
food grinder
grinds meat, poultry, nuts, and other foods. can be used for grating and shredding
vegetable peeler
has swivel blade for quickly paring fruits and vegetables
toaster oven
heats, browns, or bakes small amounts of food. some can broil
dutch oven
heavy pot with close-fitting lid that can be used on range or in oven
pressure cooker
heavy pot with locked-on lid and steam gauge. steam builds in pot, creating high temperature that cooks food quickly
rolling pin
helps you roll out biscuit , pie, or cookie dough
wire cooling rack
holds baked goods safely until they cool
slicing knife
large knife used for meat and poultry
ladle
large, angled spoon with long handle used for dipping hot liquids from a pan
roasting pan
large, heavy oval or rectangular pan. used for roasting meats and whole poultry
pot
larger and heavier than saucepan. has 2 small handles for lifting; most have lids
pastry brush
lets you brush a sauce on foods or glazes on pastry
aluminum foil pans

tongs
like giant tweezers for gripping and lifting foods
baster
long tube with bulb on the end used to suction up meat juices or other sauces for basting food that is cooking

food processor

cutting board
protects countertop and knife. plastic resists bacteria better than wood
scraper
quickly scrapes food from bowls, pans, and other containers. can also be used for light mixing
cake pan
round or square pan, few inches deep and about 8 to 10 .inches across. also come in novelty shapes.
springform pan
round pan with removable bottom. side is latched, allows you to open it gently to remove cheesecake/other delicate dessert
pie pan
round pan with slanted sides. tart pans are similar in shape, but are smaller
pizza wheel
round revolving blade on a handle for slicing pizza and cutting rolled out dough
bread knife
serrated or saw-tooth blade for slicing bread
baking sheet
similar to cookie sheet, but about 1 inch deep. used for sheet cakes, pizza, chicken pieces, fish
food chopper
small food processor. come in various sizes, from small handheld nut choppers to large electric models with several blades
paring knife
small knife for removing peel from fruits and vegetables
utility knife
small, slicing knife good for small foods such as tomatos or apples
potholder/oven mitt
thick cloth pads that protect your hands while you handle hot containers
boning knife
thin, angled blade suited for removing bones
liquid measuring cups
transparent glass or plastic cups with measurement marked on side. typically marked in fluid oz., in fractions of a cup, and in mL. has headspace of about 1/4 inches, which helps prevent spills. spout helps with pouring. common sizes are 1 and 2 cups
casserole
used for baking and serving main dishes and desserts. come in many different sizes, with or without lids
broiler/grill
used to grill food indoors
measuring spoons
usually come in sets of 4 or 5. standard sets include 4 sizes: 1/4 tsp, 1/2 tsp, 1 tsp, and 1 Tbsp. metric sets include 5 measures: 1 mL, 2 mL, 5 mL, 15 mL, and 25 mL
