Biological Contamination
Examples of Biological Contaminants
1,- Bacteria 2.- Parasites 3.- Viruses 4.- Fungi These microorganisms may be transferred to food from a variety of sources
Bacteria growth variables FAT TOM
1.- Food 2.- Acidity 3.- Time 4.- Temperature 5.- Oxigen 6.- Moisture
Viral Infections
1.- Hepatitis A 2.- Norovirus
Classifying Bacteria Illness
1.- Intoxication - B produce and release exotoxins in food and cause illness 2.- Infection - B realest endotoxins in the intestine of the affected person and cause illness
Phases of Bacteria Growth
1.- Logarithmic - multiply rapidly 2.- Stationary - number of Bacteria produce for multiplication equal the number of Bacteria dying 3.- Dicline - number decreases as there are more dying than multiplying
Symptoms of Food Borne Illness cause by viruses
1.- Nausea 2.- Vomiting 3.- Diarrea 4.- Abdominal Cramps
Sources of Contaminants
1.- People 2.- Raw food 3.- Pest 4.- Refuse
Parasits
An organisms that leaves and feeds in/or on another living creature, know as a host, in a way that benefit the parasites and disadvantage the host. In some cases the host eventually dies.
Fungi
Biological contaminants that can be found naturally in air, plants, soil and water. Fungi can be small, single-celled organisms or large multicelular organisms
Contamination
Is the presences of physical, chemical or biological matter in/or on food or the food environment
Molds
Microscopic chlorophyll-free fungi that produce threats-like filaments. They can be black, white or various colors
Viruses
Microscopic pathogens smaller than bacteria that multiply in the living cells of the host
Spores
Produce by bacterias with enable them to survive high temperatures. They do not multiply and are difficult to kill.
Yeasts
Single-celled microscopic fungi that reproduce by budding and growth rapidly on certain foodstuffs, specially those containing sugar.
Bacteria
Single-celled microscopic microorganisms with rigid cell wall that multiply by dividing into two. Some bacterias cause illness and other cause spoilage
Biological Contamination
The contamination of food by microorganisms
Viral reproduction
They do not reproduce on they own. They must infect a host cell.
