this technique depends on the fact that certain atomic nuclei are intrinsically magnetic. the property is called spin and the spinning of a proton generates a magnetic moment and this can be in either one of two orientations called spin states. the spin states can be used to determine the chemical surroundings of the hydrogen nucleus.
