Micro Lab Exercise 25
What is the estimated optimum growth temperature for Serratia marcescens?
30 C
What is the estimated optimum growth temperature for Escherichia coli?
36 to 37 C
What is the optimum growth temperature for most human pathogens? Explain.
37 C is the optimum temperature for most pathogens because that is human body themperature
Which has a greater impact on survival of an organism, temperatures above its maximum temperature or temperatures below its minimum temperature? Explain why and how this relates to typical methods used to control microbial growth.
A temperature above its maximum temperature tolerance it has the most impact over the organism survival. When under higher temperatures than the ones supported by the organism, the organism's proteins tend to denature and it becomes impossible to return to normal activity. While when under lower temperatures then the ones normally supported, the organism may stop its activity but can easily return to it once the temperature returns to ideal. Differentiate between psychrophile and psychrotroph.
Psychrophiles growth best at low temperatures whereas psychrotrophs are capable of growth at lower temperatures, ex. 4 C (they tolerate it) and can cause food spoilage
Why are psychrotrophic bacteria of concern to those in the food-service industry?
They can grow at low (refrigerator) temperatures and they tolerate temperature when heated as well so they are capable of causing spoilage in foods.
Name three cellular components involved in metabolism that are influenced by temperature changes.
ribosomes, enzymes, cellular membrane
In what environments might the following organisms be found? psychrophile
between -5°C & 20°C
In what environments might the following organisms be found? thermophile
between 50°C & 80°C
