Using both fields is a good option for shots without interfield motion, such as static scenes with no movement. When there is interfield motion, there will be noticeable jitter due to the temporal differences between the two fields. This is the render type you should use when your source footage is progressive. Using interpolated field is good for shots with interfield motion because it deletes the second field and then combines scan line pairs from the first field to create a new second one.
